Ingredients for Butternut Squash Soup

1 large butternut squash, diced

1 large white onion, diced

2 red bell peppers, diced

3 Gala apples, peeled, cored & diced

3 cloves garlic

1 tsp ground cloves

4 tbsp olive oil

1 L 10% cream

5 cups chicken or vegetable stock

3 tbsp butter

Salt to taste
Optional garnish: croutons and a drizzle of heavy cream.
How to Make Roasted Butternut Squash Soup
Step 1 – Roast the Vegetables
Preheat oven to 425°F. Toss squash, apples, onion, peppers, and garlic with olive oil and Honey Maple Squash Seasoning. Spread on a parchment-lined baking sheet and roast for 20–25 minutes, until squash is tender.
Step 2 – Build the Soup Base
In a large pot, melt butter, then add cream and bring to a low simmer. Pour in hot stock and whisk until smooth.
Step 3 – Blend Until Creamy
Add roasted veggies to the pot. Blend with an immersion blender until thick and velvety. Add water if you prefer a thinner consistency.
Step 4 – Final Simmer
Let the soup simmer uncovered on medium-low heat for 10–15 minutes, whisking occasionally.
Step 5 – Garnish & Serve
Top with croutons and a drizzle of cream before serving. Enjoy the rich, cozy flavours of fall in every spoonful.
