This easy roasted turkey sheet pan recipe is the perfect one-pan Thanksgiving dinner idea, complete with crispy turkey thighs and legs, sweet potatoes, brussels sprouts, and fresh cranberries. Seasoned with A Spice Affair’s Turkey Rub and Potato Seasoning, this dish is packed with flavour and simple enough for any weeknight or holiday meal.

  • 2 medium sweet potatoes, peeled and cubed

  • 1 cup brussels sprouts, trimmed and halved

  • ½ red onion, sliced

  • ⅓ cup fresh cranberries

  • 2 sprigs rosemary

  • 1 tbsp A Spice Affair’s Potato Seasoning

  • 1 ½ tbsp olive oil

  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.

  2. Prepare the turkey: Combine olive oil and A Spice Affair’s Turkey Rub Seasoning, then rub evenly over turkey thighs and legs. Roast for 15 minutes.

  3. Season the sweet potatoes: Mix sweet potato cubes with Potato Seasoning and olive oil.

  4. Add vegetables: Remove the sheet from the oven. Arrange the seasoned sweet potatoes around the turkey. In the same bowl, toss brussels sprouts with remaining seasoning, then add them to the tray with the sliced red onion. Roast for 20 minutes.

  5. Finish the dish: Add fresh cranberries and rosemary sprigs. Baste the turkey pieces with melted butter and return to the oven for another 15 minutes, or until the turkey reaches a safe internal temperature (165°F / 74°C).

  6. Rest and serve: Remove from oven, cover loosely with foil, and let rest for 5–10 minutes before serving.
