Ingredients
For the Turkey
1 whole 10 lb turkey, defrosted and giblets removed
¼ cup unsalted butter, softened
2 tablespoons of Turkey Rub – A Spice Affair
2 teaspoons salt
½ lemon (for cleaning)
Lemon wedges (for garnish)
For the Gravy
3 tablespoons unsalted butter
1 ½ tablespoons flour
1 tablespoon of Turkey Gravy Seasoning – A Spice Affair
1 cup hot water
Preparation
1. Prep the turkey
Clean the turkey using salt, lemon, and vinegar. Rinse and pat dry. For faster cooking, you can remove the backbone and flatten the bird (spatchcock).
2. Season with butter blend
Mix softened butter with Turkey Rub – A Spice Affair and salt. Gently lift the skin and spread half of the butter underneath. Use the rest to coat the outside. Sprinkle extra Turkey Rub – A Spice Affair for more flavour.
3. Roast the turkey
Place on a rack in a roasting pan. Cover with foil and roast at 325°F. For spatchcocked turkey, roast for 2 to 2½ hours; whole turkey takes 3 to 3½ hours. Internal temperature should reach 165°F.
4. Finish and rest
Remove foil for the last 10–15 minutes to crisp the skin. Let the turkey rest 15 minutes before carving.
5. Make the gravy
Melt butter in a saucepan. Stir in flour to form a roux. Dissolve Turkey Gravy Seasoning – A Spice Affair in hot water, then whisk into the roux. Cook until thickened.
6. Serve
Carve the turkey, garnish with lemon wedges, and serve with warm gravy.
