Maple Parmesan Hasselback Potatoes

Crispy on the outside, tender on the inside these Hasselback-style roasted potatoes with A Spice Affair’s Potato Seasoning, maple butter, and Parmesan crunch are the ultimate comfort side dish. 🥔🧀

Ingredients

For the potatoes:

  • 8 large yellow potatoes, washed well
  • 1 tbsp Potato Seasoning – A Spice Affair
  • 1/3 cup unsalted butter, melted
  • 2 tsp pure maple syrup
  • Olive oil, for baking sheet
  • 2 bamboo skewers

For the crispy topping:

  • Fresh grated Parmesan
  • 1 tbsp panko bread crumbs

For garnish:

  • Lemon zest
  • Coarse salt

Preparation

1. Prepare the potatoes

Slice potatoes in half lengthwise. Place each half flat side down between two bamboo skewers. Cut thin slices (about 1/4” thick) along the length of the potato, stopping at the skewers so the slices stay connected at the base.

2. Make the seasoned butter

In a small bowl, combine melted butter, maple syrup and Potato Seasoning – A Spice Affair.

3. Bake the potatoes

Lightly drizzle olive oil on a parchment-lined baking sheet. Place the potatoes flat side down. Brush half of the butter mixture generously over the potatoes, making sure to coat between the slices. Bake at 425°F (220°C) for 25 minutes.

Remove from the oven, brush the remaining butter mixture over the potatoes, and return to the oven at 400°F (200°C) for another 25 minutes.

4. Make the crispy Parmesan topping

On a separate parchment-lined baking tray, place small piles of grated Parmesan and sprinkle a few panko crumbs on top. Bake at 350°F (175°C) until golden and crispy, about 15 minutes. Let cool and crumble.

5. Garnish and serve

Once the potatoes are golden and tender, top with the crispy Parmesan crumble, lemon zest, and a pinch of coarse salt. Serve warm.
