2 cups cooked chicken, shredded

1 tbsp olive oil

½ cup tomato sauce or salsa

12–15 mini tortillas (or cut regular tortillas into small rounds/triangles)

½ cup shredded lettuce

½ cup shredded cheese (cheddar or Monterey Jack)

¼ cup sour cream or chipotle mayo (for drizzling)

Fresh cilantro, for garnish

Lime wedges, to serve
Preparation

Prepare the filling
Heat olive oil in a skillet. Add shredded chicken, tomato sauce, and Smoky Chipotle Seasoning. Stir and cook until heated through and coated.
