SMOKY GRILLED CHICKEN BOWL

A flavour-packed grilled chicken bowl bursting with bold spices, colourful veggies  and a creamy cilantro drizzle  to tie it all together. Perfect for BBQ season! 🍗🥑🍅🌽

Ingredients

For the chicken

For the bowl

  • Romaine lettuce, chopped

  • Grape tomatoes, halved

  • Peaches & cream corn, cooked and cooled

  • Black beans, rinsed and drained

  • Avocado, sliced

  • Pickled red onions

  • Garlic cilantro rice

  • Avocado & cilantro crema (optional – see below)

Optional – Avocado & cilantro crema

Blend 1 ripe avocado, 1/2 cup of sour cream or Greek yogurt, a handful of fresh cilantro, juice of 1 lime, and a pinch of salt until smooth and creamy.

Preparation

1. Marinate the chicken

In a large bowl or resealable bag, combine the chicken breasts with olive oil and Southern Smoke Pulled Pork Seasoning A Spice Affair. Mix well until the chicken is evenly coated. Cover and marinate in the refrigerator for at least 1 hour to let the flavours infuse.

2. Preheat and grill or roast 

Preheat your grill to 375°F (190°C) or your oven to the same temperature.

  • If using the grill, place the marinated chicken breasts directly on the grill and cook for about 6 to 8 minutes per side, depending on thickness.
  • If using the oven, place the chicken on a baking sheet and roast for about 20-25 minutes, until the internal temperature reaches 160°F (71°C). Remove the chicken from heat and let it rest before slicing.

3. Let the chicken rest and slice

Transfer the grilled chicken to a plate and let it rest for 5 minutes to retain its juices. Once rested, slice the chicken thinly against the grain.

4. Assemble the bowls

Start by layering garlic cilantro rice and romaine lettuce at the bottom of each bowl. Add the grape tomatoes, corn, black beans, avocado slices, and pickled red onions. Top with the sliced grilled chicken. For an extra burst of creaminess, drizzle with avocado & cilantro crema if using.
