Ingredients
• 250 g spaghetti
• 300 g raw shrimp, peeled and deveined
• 150 g crumbled feta cheese
• 2 tbsp olive oil
• 2 garlic cloves, minced (optional)
• 1 tbsp Roasted Garlic Salt – The Spice Age
• Fresh parsley, chopped
• Freshly ground pepper
• ½ cup reserved pasta cooking water
Preparation
1. Cook the pasta
Bring a large pot of salted water to a boil. Cook the spaghetti until al dente, following the package directions. Drain and reserve ½ cup of the cooking water.
2. Sauté the shrimp
In a large pan, heat the olive oil over medium heat. Add the minced garlic (if using) and sauté for a few seconds until fragrant. Add the shrimp and cook for 2 to 3 minutes per side, or until they turn pink and opaque. Season with Roasted Garlic Salt – The Spice Age and a pinch of pepper.
3. Make the sauce
Add the crumbled feta to the pan with the shrimp. Pour in a bit of the reserved pasta water and stir to create a creamy texture.
4. Combine with pasta
Add the cooked spaghetti and toss well to coat. Adjust with more pasta water if needed. Taste and adjust seasoning as desired.
5. Garnish and serve
Serve immediately, topped with fresh parsley, a drizzle of olive oil, and freshly ground pepper.
