Ingredients

5-6 chicken thighs, skin on and bone in

2 tbsp olive oil

1 shallot
-
1 lemon, juiced

2 cloves garlic, minced

½ cup chicken stock or white wine

1 ½ pint cherry tomatoes

½ cup pitted kalamata olives, mix of halved and whole

2-3 sprigs fresh thyme, or Dried Thyme
-
1 tbsp parsley, chopped for garnish, or Parsley Flakes

Lemon wedges for garnish

Himalayan Pink Salt and Black Pepper, to taste
Preparation
1. Marinate & Sear
Preheat oven to 425°F. Toss chicken thighs with 1 tbsp olive oil, lemon juice, and Mediterranean Chicken Seasoning A Spice Affair. Marinate for 15 minutes to 1 hour (or overnight for deeper flavour). Heat remaining olive oil in an oven-safe skillet over medium-high heat and sear chicken for 3-4 minutes per side until golden. Remove chicken and drain excess juices, leaving 1 tbsp in the pan.
2. Build the Sauce & Bake
Sauté shallot for 2-3 minutes until softened, then add garlic for 1 minute. Stir in half the cherry tomatoes and the chicken stock or wine, bringing to a boil. Return chicken to the skillet and bake for 15 minutes. Add remaining tomatoes and thyme, bake for another 15 minutes or until chicken is cooked through.
3. Finish & Serve
Mix in olives and broil for 5 minutes. Garnish with parsley and lemon wedges. Serve hot.
