The secret to ultra-juicy roast chicken? A good butter massage under the skin, bold seasoning, and a hot oven! Try this spatchcocked version with our Everything Onion blend, guaranteed success! 🍗🔥
Ingredients
For the chicken:
- 1 whole chicken, rinsed and patted dry
- ⅓ cup unsalted butter, at room temperature
- 1 tbsp Everything Onion Seasoning A Spice Affair
- 1 tsp salt
- ½ tsp pepper
Preparation
1. Spatchcock the chicken
Remove the backbone of the whole chicken with kitchen shears and flatten it by pressing down on the breast. Gently loosen the skin from the meat without tearing it.
2. Make the butter mixture
In a small bowl, combine the unsalted butter, Everything Onion Seasoning A Spice Affair, salt, and pepper.
3. Season the chicken
Spread half of the butter mixture under the loosened skin. Rub the remaining butter all over the outside of the chicken.
4. Cook the chicken
Place the chicken on a baking tray or roasting pan. Cover loosely with foil and bake or grill uncovered at 375°F for about 1 hour, or until the internal temperature reaches 165°F.
5. Rest and serve
Remove the chicken from the oven and let it rest for 5 to 10 minutes before carving. Enjoy!
