A fresh and flavourful Asian-style chicken salad! Grilled chicken seasoned with Toasted Sesame & Ginger Seasoning, tossed with crisp veggies and a zesty homemade dressing. The perfect balance of sweet, savoury, and crunchy goodness, ready in no time 🥗🍊
Ingredients
For the chicken:
- 2 chicken breasts
- 1 tbsp Toasted Sesame & Ginger Seasoning A Spice Affair
- 3 tbsp olive oil
- 1 tbsp honey
- 1 tbsp dark soy sauce
For the salad:
- 1 large romaine, chopped
- 1/2 English cucumber, sliced
- 2 carrots, peeled & julienned
- 2 mandarins, peeled & segmented
- 2 green onions, sliced
For garnish:
- Fresh cilantro
- Sesame seeds
- Sliced almonds
- Crispy wonton wrappers
For the dressing:
- 3 tbsp rice wine vinegar
- 2 tbsp honey
- 1 tbsp sesame oil
- 1 tbsp hoisin sauce
- 2 tbsp soy sauce
- 2 tsp grated fresh ginger
- 1 clove garlic, crushed
- 1/4 cup olive oil
Preparation
1. Make the dressing
Add all dressing ingredients to a jar, seal, and shake until emulsified. Set aside.
2. Marinate the chicken
In a bowl, mix Toasted Sesame & Ginger Seasoning A Spice Affair, olive oil, honey, and soy sauce. Add chicken, coat well, cover, and refrigerate for 2 hours.
3. Grill the chicken
Grill over medium heat until cooked through (internal temp 165°F/74°C). Rest 5 minutes, then slice thinly.
4. Assemble the salad
In a large dish, combine romaine, cucumber, carrots, mandarins, and green onions. Top with sliced chicken.
5. Garnish & serve
Sprinkle with cilantro, sesame seeds, almonds, and crispy wonton strips. Drizzle with dressing and enjoy.
