3â4 cups mixed vegetables (sweet potatoes, baby potatoes, carrots, Brussels sprouts, etc.), cut into bite-sized pieces

2â3 tbsp olive oil
Preparation

Preheat oven to 400°F (200°C).

Place the cut vegetables on a baking sheet.
