
CARROT CAKE WITH GOLDEN BOOSTER

This naturally sweet carrot cake is packed with freshly grated carrots, juicy pineapple, and a warm kick from our Golden Booster A Spice Affair. Topped with a tangy cream cheese frosting, it’s the perfect treat for any occasion! ✨
INGREDIENTS
For the cake

2 cups flour
-
2 tsp baking powder
-
1 tsp baking soda
-
1.5 tsp Cinnamon Ground A Spice Affair
-
1/4 tsp Nutmeg
-
1.5 tsp Golden Booster A Spice Affair
-
1/2 tsp salt
-
3/4 cup neutral oil
-
4 large eggs, room temp
-
1.5 cups brown sugar
-
1/4 cup sugar
-
1/2 cup pineapple chunks, mashed
-
2 tsp vanilla extract
-
3 cups freshly grated carrots
-
3/4 cup chopped walnuts or pecans (optional)
For the icing
-
1 block cream cheese, softened
-
1/2 cup unsalted butter, softened
-
2.5 cups icing sugar
-
1 tsp vanilla extract
-
1/4 tsp salt
PREPARATION
1. Prepare the icing
Add cream cheese and butter to the bowl of a stand mixer and whisk until smooth and combined. Add icing sugar, vanilla, and salt. Continue whisking until light and fluffy. Set aside.
2. Mix the dry ingredients
In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, Golden Booster, and salt.
3. Mix the wet ingredients
In a separate bowl, whisk together the brown sugar, white sugar, oil, eggs, pineapple, and vanilla extract. Stir in the grated carrots.
4. Combine
Add the wet mixture to the dry ingredients and stir just until combined. Fold in chopped nuts if using.
5. Bake
Grease and line two 8” cake pans. Divide the batter evenly between the pans.
Bake at 350°F (175°C) for 33–35 minutes, or until a toothpick comes out with a few moist crumbs.
Remove from oven and let cool in the pans for 15–20 minutes. Turn out onto a wire rack and cool completely.
6. Frost and enjoy
Once cakes are fully cooled, frost generously with cream cheese icing. Slice and serve!
