Smooth, creamy and full of fall flavour 🍂🥣 This Butternut Maple Soup combines roasted butternut squash with our Honey Maple Squash Seasoning for the perfect balance of sweet and savoury. Finished with a touch of cream and crunchy pumpkin seeds, it’s an easy seasonal favourite!
INGREDIENTS
For the Butternut Maple Soup:
- 1 large butternut squash, peeled, seeded, and cubed
- 1 large yellow onion, roughly chopped
- 3 cloves garlic
- 2 tablespoons olive oil
- 2 tablespoons Honey Maple Squash Seasoning A Spice Affair
- 4 cups vegetable or chicken broth
- 1/2 cup light cream
- Salt, to taste
- Black pepper, to taste
For Garnish:
- Roasted pumpkin seeds
- Light cream, for drizzling
PREPARATION
1. Roast the butternut squash
Preheat the oven to 425°F (220°C). Place the butternut squash, onion, and garlic on a parchment-lined baking sheet. Drizzle with olive oil and sprinkle with Honey Maple Squash Seasoning A Spice Affair. Toss until evenly coated.
Roast for 25 to 30 minutes, or until the squash is tender and lightly caramelized.
2. Blend the soup
Transfer the roasted squash, onion, and garlic to a large pot. Add the broth and blend with an immersion blender until completely smooth and creamy.
3. Add the cream
Place the pot over medium-low heat. Stir in the light cream and season with salt and black pepper to taste. Simmer gently for 5 to 10 minutes, stirring occasionally.
4. Adjust the consistency
For a thinner soup, add a little more broth until the desired consistency is reached. Taste and add more Honey Maple Squash Seasoning if desired.
5. Garnish and serve
Divide the soup between bowls. Finish with a swirl of cream and roasted pumpkin seeds. Serve warm and enjoy!
